Frico Rose + Classic Caesar Salad

This is by no means a healthy snack. It is full of fat and carbs and whatever else you're trying to avoid. BUT if you're looking for something crispy and fresh and sharp as an afternoon snack, here is your ticket to happiness.

You may know this already, but Frico is an Italian word that describes cheese crisp. It is crispy sharp cheddar (or the cheese of your choice) that has been shredded and fried in it's own grease until it is a crisp. You can fold it, plate it, use it as garnish, or use it as a bowl/plate. I took a classic Caesar salad and plated the greens on a flat Frico. I folded another lace-like Frico into a pretty rose and garnished the top.

I have been having serious Caesar salad cravings lately and it has been the base of every meal I have had for the last 4 days. Do you go through phases like that where you only want to eat one thing? Have you made Frico's before? What is your favorite kind of cheese to use?

  1. I totally do the 'only want to eat one thing' thing. I ate fajitas for the best part of a month a while ago.
    I've never made Frico's but oh my god they look amazing. Totes gonna try it!

  5. I have been on the same exact! Cesar salad sounds so good right now actually... I've been looking for different ways to serve it up, and among other things a Cesar salad wrap, or this way both sound super yummy. I think I know what we are having for dinner! ;)
