Seven Days of Soup // Day One // Vegetables and Rice

Today is day one of my seven days of soup challenge. Each day this week, I will make a different soup for lunch. We are trying to stick to soups using only ingredients around the house. If we don't have the ingredients, I can spend up to $10 a day to get the ingredients, but the less money spent the better.

Day One // Vegetable and Rice
Day Two // Sweet Potato
Day Three // Cream of broccoli
Day Four // Russian Beet Borscht
Day Five // Split Pea
Day Six // Carrot and Lentil
Day Seven // Corn Chowder

Today I made a mixed vegetable, brown rice and Greek yogurt soup. I used a tomato base, added water and lots of vegetables including squash, potato, carrot, corn, broccoli, and cauliflower. I mixed in garlic powder, salt, pepper and basil until it tasted right, cooked it on high for almost an hour, added brown rice and Greek yogurt and cooked it another 10 minutes until the rice was done. Topped it with a spoonful of Greek yogurt and enjoyed!

  1. YUMMMM! The greek yogurt on the top looks so amazing! I am the worst cook ever, but I do make a mean veggie chili. :)

    1. I'm a horrible cook too, but one of my "new years resolutions" was to practice a lot. So this is part of that attempt!

  2. I really like this idea - a great way to eat more veggies during the colder months. That soup looks delicious. I make a pretty good leek & potato soup, and tomato & apple too (sounds odd but it's so good!)

  3. man that is making me hungry. we had soup all last week. lots of miso soup with water chestnuts, spinach and tofu ... andrew makes this fake chicken noodle that is kind of more like minestrone. i'm cooking lentils right now, maybe i need to make soup with them!! my favorites though are potato leek and butternut squash but i don't make them often cos i'm too lazy to pull out the blender heh.

  4. mmmmm soup! i have a bunch of recipes but my all time favorite is ribolitta that i got from sunset magazine a few years ago. SO GOOD! my husband requests it a lot :) when it comes to soup, i'll try anything!
