Today I made a mixed vegetable, brown rice and Greek yogurt soup. I used a tomato base, added water and lots of vegetables including squash, potato, carrot, corn, broccoli, and cauliflower. I mixed in garlic powder, salt, pepper and basil until it tasted right, cooked it on high for almost an hour, added brown rice and Greek yogurt and cooked it another 10 minutes until the rice was done. Topped it with a spoonful of Greek yogurt and enjoyed!
Whats you favorite kind of soup? Do you make it often? I would love to hear more about your soup making experiences! Now it's back to work for me.

YUMMMM! The greek yogurt on the top looks so amazing! I am the worst cook ever, but I do make a mean veggie chili. :)

DeleteI really like this idea - a great way to eat more veggies during the colder months. That soup looks delicious. I make a pretty good leek & potato soup, and tomato & apple too (sounds odd but it's so good!)

Deleteman that is making me hungry. we had soup all last week. lots of miso soup with water chestnuts, spinach and tofu ... andrew makes this fake chicken noodle that is kind of more like minestrone. i'm cooking lentils right now, maybe i need to make soup with them!! my favorites though are potato leek and butternut squash but i don't make them often cos i'm too lazy to pull out the blender heh.

Deletemmmmm soup! i have a bunch of recipes but my all time favorite is ribolitta that i got from sunset magazine a few years ago. SO GOOD! my husband requests it a lot :) when it comes to soup, i'll try anything!
