Pecan Brittle

Doug's mom came through Chattanooga last night and at dinner she mentioned she loved pecan brittle, so when we came home, I took a few minutes to make a batch for her to have on the rest of her trip. It's super easy and uses ingredients you probably already have around the house.

You'll need a candy thermometer for this recipe, and maybe some heat resistant gloves if you want to make your brittle super thin.

Ingredients:
1 1/2 cup white granulated sugar
1/2 cup corn syrup
1/2 cup water
1 tsp salt
2 tbsp butter
+++
1tsp baking soda
1 cup of chopped pecan (or you can leave them halved, if you prefer) 

Combine sugar, corn syrup, water, salt and butter in a sauce pan and heat on low until sugar dissolves. Stir constantly. Clip on thermometer and turn burner to high, and stir until mixture is 290 degrees F. Add baking soda and pecans and keep stirring over heat until it turns a golden brown.

Pour evenly into a greased baking pan, and spread until thin with the back of greased spoon, and if you want it to be super thin, use your heat gloves to pull the brittle while it is still warm. Let cool completely and then break up into pieces. Enjoy!

We spent all morning in the ER, Doug's leg injury ended up being much more serious than we had thought and the muscle that was torn ended up getting infected (inside his body, which is crazy scary.) I also have a gnarly head cold, Sammy and Aud do too, and were all working like crazy, pretending like we're all not feeling awful. Oh well. Tomorrow is the last day to get a ticket to the Southern Blogger Mixer. I hope I feel better then. Have a good Tuesday night!

  4. Oh my goodness, I hope that you all start to feel better immediately, and that healing for Doug will come fast! The pecan brittle looks amazing. You know, like all of your recipes.
