Vegan Apple Pie Icecream

Our friend Drew brought us over a basket of green apples from his tree the other day and I have been finding all kinds of neat things to make with apples, including vegan apple pie ice cream. I have a milk allergy that prevents me from the eating of all kinds of milk related things, so vegan ice cream has become such a staple in my summertime.

My recipe is loosely adapted from this recipe, mostly because I don't have a "go-to" icecream recipe and while perusing the web for one, I found this super easy ice cream recipe that I couldn't help but try and share since I know ice cream can be slightly intimidating. Although, after my first batch of banana pudding vegan ice cream, I changed it up a little bit to my liking. 

12 ounces of full fat coconut milk, chilled (about a can and a half)
1/4 cup agave
1/2 cup brown sugar
*3 tbsp of ultra light corn syrup (don't lose your shit just yet, I'll explain why later)
pinch of salt
About a cup of ingredients (I used caramelized apples, cinnamon, and nutmeg)

*Okay, why the corn syrup. I know you can make it without, but I have noticed that the ice cream binds much better with just a touch of it. The texture improves tenfold. It doesn't taste a stitch different, but the texture is more like cow milk-based ice cream. If you are anti-corn syrup, then skip it. :)

Chill your ingredients first, add to ice cream maker. I recently thrifted a wilton ice cream maker and it's pretty awesome. I grew up making peach ice cream with my Mom using a metal ice cream maker from the 30s, and that was such a pain with the ice and salt and constantly churning. The wilton uses a gel that semi-freezes in a metal bowl, and it takes about 25-30 minutes. Just be sure it is cold enough, I left my bowl in the freezer for 24 hours before I made this batch.

  4. Professional chef, here! Wanted to weigh in on the use of corn syrup - you can also use honey as an invert sugar (the purpose of the corn syrup is as an invert) substitute in ice creams or sorbets or make a more natural version of "corn syrup" by adding a little lemon to a solution of 2 parts sugar, 1 part water and boil it for about 5 minutes. Corn syrup is the quickest way, but there are ways around it, since invert sugar in ice creams & sorbets DO make it a million times creamier :)

    I was going to jot this down to make it for James bc he has a milk allergy too, but he's allergic to coconut milk! I'll have to find some vanilla soy recipe for him. But I guess I'll just make this all for myself...

  6. mmm, hell yeah. i hate cooking, baking, or making anything, but sometimes i see something that i want SO BAD. this is one of those things. i don't like apple by themselves, but i love them in any sort of dessert. yummy.
