Black Bean and Sweet Potato Burger (see ingredients above):
Take half a can of black beans and 1/2 cup cooked sweet potato and puree. You can then combine your puree with the remaining whole beans, one egg (or egg substitute) bread crumbs and spices. Mix well, and scoop into super hot oiled pan. Black bean burgers take a little longer to cook than meat burgers, but don't rush it, or else your burger will fall to pieces, literally.
I topped ours with spinach, arugula, cheese, Carolina BBQ sauce (because I love it!) avocado and sliced cooked sweet potato. A side of cherries makes this the perfect summer lunch!
And here's a funny story. I took two bites of my burger and realized I needed to grab a drink from the kitchen. I thought Ollie was sleeping, so i didn't worry about it. But, low and behold, I came back to the living room and my plate was licked clean. Ollie was laying on the other couch again, looking innocent as could be, but we all know the truth. He burglered my burger. I rolled my eyes and laughed. What else could I do.
