I hope yall are not sick of the pumpkin craze yet! It's only September, after all! I live with a chocolate lover. And a pumpkin lover. And the lover of anything pumpkin-chocolate. So once the fall season rolls around, it's pumpkin everything in this house. It isn't quite cold enough yet thought to not enjoy a good cold cream pie. I found this pie is perfect with a cup of coffee, and of course, for breakfast!
The recipe:
For the crust
2 cups of crushed Chocolate Graham crackers
1/4 cup sugar
1/4 cup melted butter
Combine ingredients and press into pie tin. Bake at 350 for 8-10 minutes.
For the Filling:
2/3 cup sugar
2.5 squares of unsweetened chocolate
1/2 cup corn starch
2 cups almond milk
1/3 cup heavy cream
Tbsp pumpkin pie spice
1/2 cup pumpkin
3 egg yolk
In a dutch cooker, heat sugar, chocolate, corn starch, pie spice and slowly stir in almond milk and cream. Stir for 10 minutes constantly, and then once combined, cook for another 10 minutes, only stirring occasionally. Temper your egg yolk (make sure you wisk them first) with a few spoonfuls of the hot chocolate filling, and then combine eggs, stirring for another 5 minutes until fully combined, after you take it off the heat, stir in pumpkin and spices. Spoon into baked (and cooled) pie crust and refrigerate for 3-4 hours. {you can use whole milk instead of almond milk, but because of my intolerance to milk, I tried to make this so I could at least enjoy a few bites!}
For the Cream:
1 1/2 cup heavy cream
2/3 cup confectioners sugar
vanilla bean
nutmeg
cinnamon
Whip cream and sugar and spice to your liking until peaks form and your cream stiffens. Refrigerate for 30 minutes before topping your pie.
I am so happy I have been making more time to bake and make desserts lately. I love it more than just about anything, and I can't wait to make it a bigger part of our life soon....

DeleteOk, so it's taking me two months to try this recipe. I'm ready to try in the morning. One question though... It says 2.5 squares of unsweetened chocolate. Does all chocolate come in the same size squares? Is there a specific brand you use?
DeleteGah this looks aweeeeesome. I just bought chocolate and pumpkin today with no plans as to what I would make with them, and this recipe leaves enough pumpkin for some pancakes. Although, that would put me in tough decision territory, pie or pancakes for breakfast?? Thanks for sharing! I always love your down home recipes.

DeleteOh my goodness this looks absolutely amazing! I'm going to have to give it a try. Not going to lie the pumpkin pie I tried to make a couple of weeks ago came out not so great, I like to blame the pumpkin puree not being all that great, and not my hodgepodge recipe, haha!
